Walking Taco Casserole Recipe

Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 bag (about 9 ounces) nacho cheese-flavored tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • Optional toppings: chopped lettuce, diced tomatoes, sour cream, sliced jalapeños

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  3. Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and corn. Cook for an additional 5 minutes, allowing the flavors to meld.
  4. Spread half of the crushed tortilla chips evenly in the bottom of the prepared baking dish.
  5. Spoon the beef mixture over the tortilla chips, spreading it out into an even layer.
  6. Sprinkle half of the shredded cheddar cheese over the beef mixture.
  7. Layer the remaining crushed tortilla chips on top, followed by the remaining shredded cheddar cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
