  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 1/4 cup breadcrumbs (optional)

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Baking Dish: Grease a baking dish with butter or non-stick spray.
  3. Layer the Vegetables: Arrange half of the zucchini and yellow squash slices in the bottom of the baking dish. Season with salt, pepper, and half of the minced garlic.
  4. Add Cheese and Cream: Sprinkle half of the Gruyère cheese and half of the Parmesan cheese over the vegetables. Pour half of the heavy cream evenly over the top. Add a few thyme leaves.
  5. Repeat Layers: Repeat the layers with the remaining zucchini and yellow squash, garlic, cheeses, and cream. Season with more salt, pepper, and thyme.
  6. Top with Breadcrumbs (Optional): If using, sprinkle breadcrumbs over the top layer for added crunch.
  7. Bake: Dot the top with small pieces of butter and cover the dish with foil. Bake in the preheated oven for 25 minutes.
  8. Finish Baking: Remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and the vegetables are tender.
