Zucchini Spoonful Donuts Recipe

Delightfully moist and subtly sweet, these zucchini spoonful donuts are a perfect treat for any time of day. They are easy to make and a great way to use up extra zucchini from your garden!


  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar for dusting


  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a medium bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the vegetable oil, milk, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the grated zucchini until evenly distributed.
  6. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  7. Bake for 12-15 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  8. Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
  9. If desired, dust with powdered sugar before serving.
